About Us

A few words about us

Let us introduce our new concept

Haisai, has been through periods of opening and closing the past few years and we have now finalized a new concept. Our team- Chef Min Young Lee and staff, will focus on creating menus highlighting ingredients mostly from  Eigensinn Farm. We will no longer have our Bakery running, but still can expect our organic sourdough bread in restaurant. Our wine list will consist of only Ontario wines. And finally, Haisai will continue to operate under the guidance of Chef Michael and Nobuyo Stadtländer.

Haisai extends Eigensinn Farms’ philosophies and practices, where Eigensinn Farm supplies most of the ingredients. As well as, sourcing from trusted local organic farmers and gardeners and foraging from our land. At Haisai, you can expect dishes deeply connected to the surronding bounty of our close environment.

Our Team

Meet the chef

Chef Min Young Lee

Chef Min Young Lee-born April 21 1992, started his career in the culinary world as an apprentice at Eigensinn Farm, under renowned Chef Michael Stadtländer in 2011. Always intrigued by The Stadtländer’s philosophy, he later found his passion and appreciation for cuisine and agriculture which has lead him to take part of major projects and events at Eigensinn Farm; (The Singhampton Project, Food Stock, Soup Stock, Camp Home, The Pinespiel Project) Having worked at a handful of top restaurants across Canada; (Eigensinn Farm, Scaramouche, Haisai Restaurant, Fogo Island Inn, George Restaurant & The Sooke Harbour House) Min Young has always found his path leading him back to Singhampton, where he now calls home.
